I sometimes get really frustrated when I buy something, but then I regret it later. Possibly a "trash function," which is mainly just getting rid of the item, but it could give back cheese if so desired (I don't mean toggle, I mean if the mods and community approves).
Also, for some reason after I bought my 7th item, it didn't show up in owned items, and I had to go to the category, scroll all the way down, and click "equip."
What happened to the collectors' tab?
I don't know what else to add, but feel free to criticize and suggest more. As a side note, I'm not active on the forums, so don't expect me to respond too quickly.

Nah, they would never implement this feature because you could just swap around your usage of cheese as you felt and never have to shop again (removing atelier 801's source of income with their furs). Your usage of cheese is entirely up to you, the shop even asks you to confirm if you want to spend your cheese. Once you use your cheese, it's gone.

The purpose of expending your cheese forever in the shop is the same as spending cheese to redistribute your skills; they want you to make your selections carefully so that it actually means something and that you'll take the time to choose an option that you're going to commit to. Giving players the ability to swap these around at will is only for those games that want you to try new things; this particular game is one where you collect everything.

The collector's tab was removed because players were frustrated because of the items that could only be obtained during the event, and there were unavoidable circumstances (such as being away on holiday) that prevented players from getting a hold of these items; so they were allowed again.
