Yesterday I hatched a shiny Mawile without noticing and released it and only noticed when it was too late. Luckly I saved before I hatched it and since eggs are pre determined I got it back.

Reason I accidentally released was because it only had 3 IVs Atk Def and SpD. Still Adamant and has Intimidate though.
