To be honest, AmazingPhil (He deserves a lot of recogniziton for his creativity and creating the well known The Seven Second Challenge and many other things he has created. He's also very funny and such an amazing person in general(mind the pun). He just deserves a lot more then 3m subs, and if you don't agree, thats fine. He's genuinely the nicest YouTuber i've ever come across of YouTube.) Other people as well like KickThePj (as well for his creativity.)
But hey, that's just me.

Vat19 has 2 million subs, and their website isnt exactly unpopular

Great Depression Cooking! Probably my FAVORITE youtube channel, however they don't upload anymore, on account of Clara's passing on a few years back. However, it's a very cute channel of an old lady recreating meals she ate during The Depression, and giving history lessons from the view point of a teenager who went through it!

RunnyRunny999! If you know of Cooking with Dog (if you don't, highly recommended!), then you'll enjoy RunnyRunny. An everyday man who creates rather simple Japanese meals at the request of his fans. Very charming and easy to follow, and just fun to listen to.

Life Where I'm From is very charming videos of a young family, and what it's like living in Japan. Very cute and you learn quite a bit! The father just made a new channel, Life Where I'm From X, which goes over the more "adult" things in Japan. Taxes, Wages, etc. Pretty informative!

EmmyMadeInJapan goes over all different types of treats and sweets from all different countries. A mother of two young boys, she gets sent food from all different countries, tries out different "odd" recipes (such as recipes from a book about cooking with Ramen in Prison), and the such. I really enjoy watching her and she updates nearly every day.

JonTronShow - 2,246,652 subscribers at the time of writing this. (I honestly thought he had more.)

Those are all great YouTubers, but they're not small or underrated at all.

Nobody deserves more views. They would have more views, if they were truly something else compared to the rest of youtubers.

Both Hippocrit and Endless Jess only have a couple of thousands of subs even though they put way more work into their videos than your average youtuber (and are both really entertaining to watch).
Then there's also nopeekingjon, who only has a 100 subs though he makes great electronic music.
