I'll tell them I'm not interested or I will not engage with their behavior.

I just take the compliment, keep talking with them and subtly slip in that I have a girlfriend.

Unless they get too direct, then I just straight up say I'm taken, but thank them for their compliment anyway.
Being polite doesn't hurt.
