Well, you don't, you can use hourglasses (think of it as currency) to unlock anything you have missed.
Though the chatrooms do appear at specific times, so it's cheaper to just play them at these times. Also more mentally draining.
I like the Christmas special so far.

when you spent a lot of days on yoosungs route because, hey, maybe you'll actually get the good ending for once
