You get an item from each egg you manage to collect.
I believe the 'rabbit skin' is more unusal/rare to get than other items, so you have to collect some eggs until you get it.
I'm not 100% sure about the rarity though, I just believe that. Others may correct me if I'm wrong xp

They didn't die, the whole time, just floated there, not flying or anything just sort of.... stayed there

Likely just lag. If they do it multiple times, report it.
